African Wellness Cuisine

Food is the first medicine. African culinary tradition is one of the most sophisticated wellness systems on earth — and at AFYA, what you eat is part of your treatment. Not separate from it.

THE KITCHEN PHILOSOPHY.

"We are not inspired by African cuisine. We are rooted in it. Every dish carries a continent's worth of healing intelligence."

The AFYA kitchen is not a wellness restaurant serving African-influenced food. It is an African kitchen — built on the culinary traditions of West, East, Central, Southern, and North Africa, with every menu decision rooted in the medicinal intelligence of those traditions. Anti-inflammatory grains, fermented foods, plant medicine, and communal eating rituals are not additions to the menu. They are the foundation of it.

At AFYA, the kitchen, the garden, and the spa practitioner team work as a single system. The botanical practitioner harvests from the garden each morning. The wellness chef formulates the daily menu from what is in season and what each guest's body needs. The spa team draws from the same botanical sources for treatments that afternoon. Nourishment and healing are the same act. The kitchen is a treatment room with a fire in it.

Morning Ritual Table

Daily · Communal · Plant-based preparation

I

The day at AFYA does not begin with a buffet. It begins with a ritual. The Morning Ritual Table is a daily communal spread designed around the African tradition of starting the day with foods that prepare the body — not just fill it. Every item is chosen for its medicinal function alongside its flavour.

  • Fermented grain porridges — ogi, uji, and teff — gut health and energy

  • Indigenous botanical tea blends — rotating daily from the garden harvest

  • Fresh tropical fruit selections with medicinal honey and black seed

  • Baobab and moringa powder preparations — vitamin C and complete protein

  • Cold-pressed botanical juice from the plant medicine bar — daily formulation

  • Communal setting — long table, shared service, no individual plating

The Healer's Bowl

Daily · Signature dish · Rotating formulation

2

AFYA's signature daily wellness dish — a rotating formulation developed by the wellness chef in collaboration with the botanical practitioner. Built around the principles of African healing cuisine: anti-inflammatory foundations, plant medicine at the center, and flavour so complete that nothing feels like medicine. Available at lunch and dinner service.

  • Anti-inflammatory grain base — fonio, sorghum, teff, or millet by season

  • Indigenous greens and legumes — bitter leaf, morogo, cowpea, lentil

  • Botanical spice blend — turmeric, ginger, grains of paradise, negro pepper

  • Sourced from the AFYA Botanical Harvest Garden daily

  • Wellness chef provides daily brief — ingredient origins and healing function

  • Plant-based, gluten-conscious, and allergen-adaptable by request

Plant Medicine Bar

All day · Formulated tonics · Apothecary-kitchen bridge

3

The Plant Medicine Bar is open all day and serves as the living bridge between the kitchen and the botanical apothecary. Every tonic, juice, and infusion is formulated around a specific wellness intention — drawn from West and East African plant medicine traditions. You do not simply order a drink. You choose what you need.

  • Adaptogenic tonic menu — ashwagandha, moringa, baobab, black seed, rooibos

  • Fresh cold-pressed botanical juices — formulated for immunity, energy, recovery, calm

  • Herbal steam infusions — for respiratory health and nervous system support

  • Custom formulation available — practitioner consultation at the bar

  • Ingredients sourced fresh daily from the botanical garden

  • Take-home dried blend kits — packaged by the apothecary team

Communal Dinner Experience

Nightly · Shared table · Regional African cuisine

4

The most important meal at AFYA is eaten together. The Communal Dinner Experience is a nightly shared table featuring full regional African cuisine — prepared seasonally, served communally, and designed to be eaten in the way that African dining tradition has always intended: together, unhurried, in conversation with the people around you. This is not a restaurant service. It is a communal ritual that happens to involve extraordinary food.

  • Full regional African menu — rotating across five culinary traditions

  • Seasonal and locally sourced where possible, with African pantry staples year-round

  • Family-style service — shared dishes, not individual plating

  • Wellness chef introduction — daily brief on the menu's healing intention

  • Optional healing circle or storytelling session follows dinner — by season

  • Included in all resort accommodation tiers

Private In-Suite Dining

5

On request · Wellness-aligned · All suite tiers

Available for all accommodation tiers — a private in-suite dining experience designed around your personal wellness goals and dietary requirements. Unlike standard room service, AFYA's in-suite menu is developed in collaboration with the wellness chef and is explicitly aligned to whatever your body is working on during your stay — whether that is recovery, restoration, immune support, or simply deep nourishment in complete privacy.

  • Full in-suite menu available at all hours during resort operating times

  • Wellness goal alignment — menu adapted to your arrival consultation

  • Dietary customisation — plant-based, allergen-adapted, medical dietary needs

  • Personal wellness chef consultation available on arrival or by appointment

  • Curated botanical tea and tonic service included with in-suite dining

  • Enhanced private ritual dining format — Well-being Suite guests

The Chef's Table

Intimate · 8 guests maximum · By reservation · Weekly

Once a week, AFYA's wellness chef opens the kitchen for an intimate 8-guest Chef's Table experience — a full narrative tasting menu that traces the history, the science, and the flavour of African wellness cuisine from its oldest recorded traditions to the contemporary table. Each course arrives with its story: where the ingredient comes from, what healer first used it, what it does in the body, and why it belongs in a meal that is also a medicine. This is the most immersive food experience AFYA offers — and one of the most unique dining experiences in the DMV.

  • 8 guests maximum — intimate, unhurried, fully personal

  • Full multi-course tasting menu — African culinary traditions across all five regions

  • Each course presented by the wellness chef with origin and healing context

  • Botanical wine and tonic pairings — African-inspired, non-alcoholic available

  • Kitchen tour and botanical pantry walk included

  • Take-home recipe cards and custom spice blend from the AFYA kitchen

  • Complimentary for Founding Patron ($2,500) and Ancestral Retreat ($5,000) backers

  • Available by advance reservation — all other resort guests

The Kitchen as Ecosystem

The kitchen does not operate alone.

Connected to the garden

The botanical practitioner and the wellness chef meet each week to align the kitchen menu with what is in season in the garden. Ingredients are harvested in the morning and in the kitchen by afternoon. No supply chain. No time between earth and plate. The garden and the kitchen are one system.

Connected to your treatment

Your arrival wellness consultation informs the kitchen. If you are working on inflammation, your Healer's Bowl will be formulated differently than the guest in the suite beside you. The food is not generic. It is calibrated. The kitchen is part of your individual healing programme.

Connected to community

In African tradition, food is never only nourishment — it is the mechanism of community. The shared table at AFYA is not a dining format. It is a healing intervention. Eating together, in the African tradition, is itself a wellness practice. The communal dinner is designed as part of the ecosystem, not an amenity added to it.
